Avocado toast has reigned supreme as the go-to millennial breakfast for quite some time.

Being one of the most Instagrammable members of the breakfast family, the dish remains in the top spot as one of the trendiest foods to eat for breakfast or for brunch.

Some like it topped off with an egg, while others drizzle a bit of pesto or herbs, but an Australian based foodie has come up with a new way to enjoy the popular meal.

Ayeh Far who uses her Instagram and TikTok to share plant focussed recipes, posted her version of the sweet potato avocado toast recipe.

For her dish she stacked smashed avocado, rocket leaves and grilled haloumi onto a sweet potato slice. Yes, in this recipe the toast is a slice of sweet potato.

In the video that has over 200,000 views on Instagram, Far can be seen slicing up a sweet potato lengthways to form thick slices. She then places them on a baking tray to be cooked for about 15 minutes or until soft.

While the potatoes are in the oven Far fried some chopped haloumi pieces in a pan until golden brown and then smashed some avocado.

Once she was done assembling her unique meal she topped it off by adding a teaspoon of honey, lemon juice and chili flakes.

After sharing the recipe online other foodies seemed excited to try the easy and quick recipe.

Here is how you can spice up your breakfast by making some sweet potato avocado toast.

Ingredients:

Smashed avocado

Rocket

Haloumi

Honey

Sweet potato

Lemon juice

Chili flakes (optional)

Method:

Slice the sweet potato lengthways into thick slices and cook in the oven for 12 minutes or until soft

Smash the avocado and season with salt

Chop and fry the haloumi in a pan on the stove until brown

Assemble the toast with the avocado first followed by the rocket and haloumi

Add a drizzle of honey and lemon juice on top as well as the chili flakes if desired

Season to taste
